LAS VEGAS (March 12, 2025) – On Saturday, March 8, Wynn Las Vegas hosted an exclusive wine dinner with globally-renowned winery Screaming Eagle, marking the winery’s sole dinner hosted in the United States in 2025. As a highlight event of Wynn’s ongoing Connoisseur Series, the intimate dinner featured a multi-course meal, several Screaming Eagle vintages, and remarks from Screaming Eagle and Wynn Las Vegas experts.
Limited to just 20 guests, the evening began with a reception featuring The Hilt Estate Sparkling wine before guests were seated in the glamorous private dining room of Wynn and The h.wood Group’s modern supper club Delilah for a six-course feast from Delilah’s Executive Chef, Jonathan Bauman. Menu highlights included Mediterranean Turbot topped with black winter truffles, sunchoke, and sauce vin jaune paired with a 2019 Sauvignon Blanc; Grazing Star Wagyu Beef braised short rib and New York strip with morels, English peas, fingerling potatoes, and pickled ramp jus paired with a 2007 Cabernet Sauvignon; and Prospector Black Truffle Cheese Mille-Feuille with maitake mushroom and cassis, served alongside a 1999 Cabernet Sauvignon.
Screaming Eagle Estate Director Armand de Maigret guided guests through the nuances of the six wines that were poured, dating back 26 years, providing unique insight to the usually private winery. Delilah’s lead sommelier, Cristie Norman, offered additional notes on each of the pairings. Guests also received a fine bone china show plate adorned with the Screaming Eagle and Delilah logos, serving as a memento from the one-of-a-kind evening.
