A grand Blanc de Noirs cuvée that reveals the terroir’s magic and showcases the House’s ancestral savoir-faire.
February 27th – The Clos Saint-Hilaire originates from a single, enclosed one-hectare plot of old vines planted with Pinot Noir in Mareuil-sur-Aÿ in 1964. Named after the patron saint of the village where the family House was founded, this site is maintained with the utmost respect for the environment and for biodiversity.
The new 2005 vintage is entirely vinified in oak casks and displays a mesmerizing and expressive charm, bursting with rich and intense flavors. On the palate, one finds hints of puffed buckwheat and liquorice wood, with a generosity that carries the finish towards a delicious chalky minerality. This micro cuvée will pair wonderfully with flounder and Myanmar coffee.
Its label made of cherry wood, sourced from sustainable forests, enhances the sense of authenticity and singularity of this cuvée. Each individual wooden label is distinguished by differences in grain and colour, which makes each bottle unique, just like the personality of this rare vintage.

A union between Nicolas François Billecart and Elisabeth Salmon who, in 1818 and just married, founded their own Champagne House in Mareuil-sur-Aÿ, a village near Epernay. At their side was Louis Salmon, Elisabeth’s brother, a passionate oenologist. Today, Mathieu Roland-Billecart, the 7th generation of the family, heads the House.
