Lynmar Estate Introduces Fall Collectors Lunch Pairing Menu

The best of fall ingredients to be showcased at the picturesque Russian River Valley winery

(September 26; Sebastopol, CA) – With the onset of a new season, Lynn and Anisya Fritz, proprietors of Russian River Valley’s Lynmar Estate, have debuted a new Collectors Lunch Pairing menu at the winery and tasting room in Sebastopol, CA. Estate Chef David Frakes’ seasonal menu will showcase ingredients grown primarily at Lynmar’s estate gardens and other local sources. Available at the winery’s stunning Quail Hill Vineyard, guests are seated at a private table in which they may enjoy an elevated three-course meal, individually plated, and paired to a selection of Lynmar’s estate-grown Chardonnay and Pinot Noir wines. The Lynmar culinary element was born out of a desire to create a sense of place for guests to immerse themselves in the Russian River Valley’s abundance of food, wine, and nature. Utilizing a bounty of fresh ingredients grown on the property, Chef David Frakes collaborates with Lynn and Anisya Fritz, as well as Lynmar’s head gardener, Justino Rosales and the agriculture team, to collectively plant and nurture an array of ingredients that inspire a sensory and seasonal experience year-round. 

As Estate Chef at Lynmar since 2011, David Frakes draws upon his history in developing culinary programs for La Scene at San Francisco’s Warwick-Regis Hotel, Gary Danko at the Ritz-Carlton, Applewood Inn in Guerneville, and Beringer Vineyards. Today, he finds his inspiration within the bucolic gardens at Lynmar, his relationships with local Sonoma County purveyors and the connection he hopes to impart on guests as they visit for these unique tasting experiences.

“The abundance of what we are able to offer from the estate fuels our team’s creativity as we anticipate the changing seasons,” says Chef David Frakes. “Fall is an especially exciting time for us as we are able to tap into the history of the Russian River Valley and produce that had been grown long before wine grapes. The beauty of Lynmar lies in the dedication to utilizing what the land provides and bringing that to life on a plate and in our glass.”

The estate grown ingredients for the fall menu include Granny Smith, Gravenstein and Hidden Rose apples, balsamic vinegar, chives, edible flowers, eggs, figs, garlic, lemon, apple mint, mulberries, olive oil, oranges, oregano, Asian, Bartlett and Comice pears, sage, Black Futsu, butternut and delicata squash, thyme, tomatillos, heirloom tomatoes. Both the olive oil and balsamic vinegar are bottled exclusively for Chef David’s signature culinary experiences at the property. “This is one of the most exciting pairing menus that we are debuting,” said Anisya Fritz. “As we enter this festive season and following a successful 2022 harvest, we are eager to welcome guests to experience the fall foliage, gardens and new seasonal ingredients that we are so fortunate to cultivate here at Lynmar. It is a true testament to our love of the land and what it is capable of providing.”

Featuring three courses and a signature Lynmar popcorn offering, the Collectors Lunch Pairing thoughtfully matches each dish with one of Lynmar Estate’s wines:
